Golden Sella vs Creamy Sella — what is the difference?

Golden Sella is fully parboiled and amber. Creamy Sella is lightly parboiled and pale cream. Both are firmer and break less than raw or steam rice. Golden Sella holds up longest under long cooking and holding; Creamy Sella gives a whiter plate with most of the same durability. The colour is a result of the parboiling, not a dye.

What is the difference between Golden Sella and Creamy Sella rice?

Both are parboiled basmati. The difference is how far the parboiling is taken. Golden Sella is fully parboiled, which turns the grain amber and makes it the firmest of the two. Creamy Sella is lightly parboiled, so it keeps a pale cream colour while still being much firmer than raw or steam rice. Neither colour comes from dye or additives — it is the parboiling itself.

Which is better, Golden Sella or Creamy Sella?

Neither is better; they suit different service. Choose Golden Sella when the rice sits in a pot or under meat for a long time, as in Mandi, Kabsa or buffet service, because it resists breaking and clumping the longest. Choose Creamy Sella when a whiter plate is wanted, as in many biryani and pilaf presentations, while still needing more durability than steam rice.

Why is Golden Sella rice golden in colour?

The colour comes from the parboiling process. Paddy is soaked, steamed and dried before milling. During that steaming, pigments and nutrients in the bran move into the grain and heat-driven browning deepens the tone. The longer and hotter the parboiling, the more amber the grain. No colouring is added.

Is Creamy Sella the same as white or steam rice?

No. Creamy Sella is parboiled, steam rice is not. Steam rice is soaked and steamed after milling, which sets the grain but does not carry bran compounds into it. Creamy Sella goes through parboiling before milling, which is why it is firmer, breaks less and holds its shape longer than steam rice, even though both look close to white.

How can I tell Golden Sella and Creamy Sella apart by eye?

By colour depth and translucency. Golden Sella is amber and glassy; light passes through it. Creamy Sella is pale ivory and softer looking. Measured on our own shipment samples using a simple yellowness reading of (R-B)/R on the grain, Golden Sella reads roughly 22 to 25 percent and Creamy Sella roughly 12 to 14 percent. Raw and steam rice read under 5 percent.

Does Golden Sella take longer to cook than Creamy Sella?

Yes, slightly. Parboiled rice is denser, so it needs a little more water and time. As a starting point we suggest Golden Sella at about 1:2 rice to water with a 45 minute soak, and Creamy Sella slightly less. Exact timing depends on the lot, the pot and the method, and should be settled on a sample cook before a first order.

Which Sella grade is better for biryani?

Both are used for biryani and it is a matter of the look you want. Creamy Sella gives the whiter, brighter plate that many biryani presentations are built around. Golden Sella gives a warmer coloured grain with the highest resistance to breaking, which suits large-batch cooking and long holding.
